Our Story
Cove Honey is a family-owned and operated, local, New Haven apiary.
Growing up on a farm in the Pacific Northwest, beekeeper, Donald Cox, has fond memories of watching honey bees work the fruit trees in his family’s orchard. After graduating from veterinary school at Washington State University, he moved to New Haven, Connecticut to pursue a master’s degree in public health from Yale.
He started beekeeping after attending multiple veterinary conferences describing the immediate need for veterinarians in apiculture. He started out with a few beehives when his two daughters were young. He has now expanded the apiary, which includes locations in both New Haven and Woodbridge. Currently, Donald and his daughters, who are 13 and 9 years old, tend to the hives. His wife works with Donald and the girls on the harvesting and production side of the business. Local honey is sold seasonally via a roadside stand on Townsend Avenue. In addition, Cove Honey offers pollination services, nuc development, and hive inspections.
